These cute and easy-to-make tomato tartlets are perfect as an appetizer for any cocktail hour. Made with pie crust, a bold cheese like goat cheese or Gorgonzola, cherry tomatoes, and baked until golden brown, they are a simple yet impressive snack.
1. Spray your muffin tin with nonstick spray.
2. Cut your pie crust into small rounds to fit mini muffin tin.
3. Add a good amount of goat cheese, blue cheese, or Gorgonzola to each pie crust round in the muffin tin. (Fill it up farther than I did so that your tomatoes don’t sink).
4. Sprinkle with salt and pepper.
5. Add a little extra flavor with some pesto if you’d like.
6. Top each tartlet with a cherry tomato, drizzle with olive oil, and add a generous bit of salt.
7. Bake at 400°F until the crust is golden brown.
8. Garnish with chopped basil or parsley before serving.
