A simple recipe for classic peanut butter cookies. Using creamy peanut butter is recommended for the best consistency, as natural peanut butter with separated oil can cause the cookies to spread and break apart. Tips for imprinting the cookies are also provided.

Instructions

Preheat oven to 350 degrees F.

Line a baking sheet with parchment paper.

Combine peanut butter, sugar, egg, vanilla (and chocolate if using).

Form dough into round tablespoon-fulls. Then roll in an extra bowl of sugar, if desired. Place on the baking sheet at least 2 inches apart, and flatten slightly with your hand or a spatula.

Bake for 7-10 minutes, until the cookies are just slightly browned on the bottom, being careful not to over-bake.

Remove and sprinkle with a bit of kosher salt.

Let cool on the baking sheet for 1 minute, then transfer to a wire rack to cool completely. They will be soft until they cool.
