Ingredients: 5 lb apples - peeled, cored, and quartered (Fuji, Golden Delicious, McIntosh, or Jona gold preferred); 0.25 cup granulated sugar; 0.5 cup light brown sugar, lightly packed; 2 tsp ground cinnamon; 0.25 tsp freshly grated nutmeg; 0.12 tsp ground cloves; 0.25 tsp salt; 1 tbsp pure vanilla extract

Nothing says Fall, like the smell of apple butter cooking away or the delectable taste of the perfect apple butter. This is a staple for me for so many reasons. It brings in the Fall 🍁🍂🍁 vibe like nothing else, and it's so easily adaptable to anything I've got going on. For example, I've got company coming in this weekend, and I will definitely have it out on a cheese tray, or I will make apple brie Crostini to welcome them in. But its uses are endless, oatmeal, pancakes, cocktails, cheese trays, and one of my FAVORITES, a fabulous hostess gift! So get those apples and make a batch.

Instructions

Place the apples in a 6-quart Instant Pot. Add sugars, cinnamon, nutmeg, cloves, and salt. And mix to combine.

Turn Instant Pot to "Manual" and pressure cook on high pressure for 90 minutes. Allow to natural release for 10 minutes before releasing any remaining pressure.

Use an immersion blender to puree the apple butter until smooth.

Turn Instant Pot to "Slow Cook" and cook on high for about 2 hours, stirring occasionally. Don't put the lid on; just prop it 1/2 way so the apple butter can reduce.

Stir in vanilla.

Spoon the mixture into containers, cover, and refrigerate for up to two weeks or freeze.
