A guide to making your own vanilla extract using either fresh or spent vanilla beans steeped in vodka or cognac. This method is perfect for utilizing vanilla pods to create a rich, aromatic flavoring for various culinary applications.
To make homemade vanilla extract, begin by slicing fresh vanilla beans lengthwise. If using spent beans, you might need a slightly higher quantity to achieve a similar strength. Combine 3 to 4 vanilla beans with approximately 1 cup of your chosen alcohol (vodka or cognac) in a clean glass jar. Seal the jar and shake it gently to ensure the beans are fully submerged. Store the jar in a cool, dark place for a minimum of two months, or ideally longer, to allow the flavors to properly infuse. Remember to shake the jar periodically, whenever it comes to mind, to aid in the extraction process. You can also continuously add more spent beans to the jar over time to replenish or strengthen the extract.
