Flower Tomato Bruschetta

1. Preheat the oven (or a gas grill) to 450 degrees Fahrenheit. Line a baking sheet with parchment paper for easy clean-up, if desired.
2. Slice your baguette on the diagonal into pieces no wider than ½-inch. Lightly brush both sides of each slice with olive oil. (you may not need all the bread depending on how many you want to make)
3. Place the slices in a single layer on your prepared baking sheet and bake them on the middle rack for 6 to 9 minutes until they’re crisp and nicely golden on top. Sprinkle the toasts lightly with salt.

Flower Crostini

1. Cut tomatoes in quarters but be sure to not cut through the base.
2. Set aside.
3. Spread cheese on each crostini, leaving a bit of the edge showing
4. Top with a “flower” tomato, fanning out the tomato as desired.
5. Use part of the oregano stem as the stem, and place a few tiny leaves here and there.
6. Drizzle with more olive oil if desired, a sprinkle of kosher salt, and serve immediately.
